Mexican Pile-On. A Recipe.

The weekend was terrific and so was the food, first to last. Beginning with the delicious birthday dinner, and ending with the amazing Fourth of July spread, we were fairly bursting with the best of all goodies. 

I knew you would love the birthday dinner, which is a unique favorite: Mexican Pile-On, made and served by a sweet sister and her (chef-like) husband. Family and friends know very well that nothing comes out of their kitchen that is not fabulous. There is such a variety! This is partly due to the intriguing fact that the 'chef-like' husband was actually trained as a Chef. The Horst Mager Culinary Institute turns out the best, and he is definitely one of them. We have long been the happy recipients of many an enticing dish.

Mexican Pile-On was not one of Horst Mager's recipes, but is grand all the same. My sister asked, "What would you most like to have for dinner on your birthday? Just name it!" This took only a moment to decide, and then I looked forward to it all week.

The trick with this recipe is that one must commit to providing each ingredient (if you are the cook), and to leave nothing off your plate (if you are the guest). It must all be piled on! Here is the recipe:

Mexican Pile-On

rice (white is nice)
Fritos (or tortilla chips)
beans (kidney is fine)
taco meat
grated cheese (cheddar or mexican)
chopped lettuce
chopped tomato
chopped sweet white onion (a Walla Walla Sweet would be fab!)
chopped olives
sour cream
cheese sauce (chile con queso) if you have it
guacamole 
coconut flakes (don't leave this out!)
a drop or two of hot sauce on top

At first perhaps the list seems complicated, and it is true - there are a lot of ingredients! The entire countertop was covered with them, on my birthday (thank you sister!). The end result is a nice, tall salad on your plate. The only items that were warmed up were the rice, the taco meat and the cheese sauce. Everything else was cold or room temperature. 

So drive on down to the Local, grab a basket, and have at it. You will be so happy you did!
